Greek Quesadillas with Tzatziki
To kick off Super Bowl Sunday, I've made Greek Quesadillas made with: whole wheat tortillas stuffed with fresh veggies, feta cheese, and served with refreshing tzatziki sauce. Snack on this during the first half of the game!
Greek Quesadillas with Tzatziki
Makes 6 servings
Ingredients [for the tzatziki]
- 1 cup plain greek yogurt
- 1/2 cucumber, seeded
- 1/2 tablespoon fresh dill, chopped
- Juice from 1/2 lemon
- Salt & pepper to taste
Ingredients [for the filling]
- 1/2 cucumber, seeded and diced
- 2 tablespoons red onion, diced
- 1/2 cup grape tomatoes, quartered
- 1/2 cup shredded mozzarella
- 1/4 cup crumbled feta
Ingredients [for everything else]
- 4 large tortillas (I used La Tortilla Factory Low Carb Whole Wheat)
- 1/4 cup shredded mozzarella
- Cooking spray or 1/2 teaspoon olive oil per quesadilla
Directions
~ Always read through the ingredient list & full directions first. Do all of your cutting/chopping at the beginning -- it makes things much easier. For this recipe, that includes: dill, lemon, cucumber for quesadillas, onion, and tomatoes. ~
- Shred the cucumber using a grater or the shredding blade on a food processor. Mix together with the rest of the ingredients for the tzatziki. Refrigerate for at least 30 minutes.
- To make the filling, mix together the vegetables and cheeses for the quesadillas in a large bowl.
- Spray pan with cooking spray (or use 1/2 teaspoon olive oil) and heat to medium-high. Place one tortilla in the pan and spoon the filling onto half of the tortilla. Sprinkle a pinch of mozzarella onto the other side of the tortilla. When the cheese begins to melt and the tortilla gets crispy and brown on the outside, fold the tortilla in half to make the quesadilla. Repeat for every quesadilla.
- Slice into wedges and serve immediately with tzatziki. Enjoy!
