Shaved Asparagus Salad with Lemon Dijon Vinaigrette

The perfect spring time salad! The tanginess of the dressing matches great with the freshness of the raw asparagus. And of course parmesan cheese makes everything better!

Shaved Asparagus Salad with Lemon Dijon Vinaigrette

Serves 2

INGREDIENTS [for the vinaigrette]

  • 1 clove garlic, grated or minced
  • 2 tablespoons red wine vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dijon mustard
  • 1 tablespoon lemon juice
  • 1 quick squeeze of honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

INGREDIENTS [FOR everything else]

  • 1 bunch asparagus
  • 1/4 cup parmasan cheese, shaved
  • 1/4 cup pine nuts
  • Salt & pepper to taste

DIRECTIONS

  1. Combine everything for the vinaigrette and set aside in the fridge.
  2. Chop off the ends of your asparagus.*
  3. With a vegetable peeler or using a mandolin, slice shave your asparagus into long strips.
  4. Top the shaved asparagus with the pine nuts, parmesan, vinaigrette, and a sprinkle more of salt & pepper. Serve immediately & enjoy!

* A good trick for knowing how much of the asparagus to chop off: hold one stalk in your hands, and gently bend until it snaps. Cut the rest of the bunch at the spot it snapped!
