Porsche Pops: Berries & Cream Popsicles

About a week ago, my friend [and talented photographer] Porsche texted me asking if I would make a recipe for a berry popsicle right in time for summer. Thanks for the idea girl! Everyone be sure to check out her amazing photography HERE.

PORSCHE POPS: BERRIES & CREAM POPSICLES

Makes 6 small popsicles

INGREDIENTS [FOR THE BERRIES]

  • 1 cup fresh blueberries
  • 1 cup fresh strawberries, chopped
  • 1 cup water, divided
  • 4 tablespoons maple syrup, divided*
  • Juice from 1 lemon, divided

* Use honey or agave as your sweetener if you prefer

INGREDIENTS [FOR THE "CREAM"]

  • 1 cup vanilla yogurt
  • 1/2 cup almond milk** (I prefer unsweetened vanilla)
  • 1 teaspoon vanilla extract

** Use dairy milk if you prefer

DIRECTIONS

  1. Chop your strawberries.
  2. In two medium saucepans (one for each berry), combine each of the berries with 1/2 cup of water, 2 tablespoons of maple syrup, and half of the lemon juice. Heat over medium heat for 20-25 minutes, stirring occasionally, and mashing with the back of your spoon. Remove from the heat and let cool completely.
  3. In a medium bowl, combine the ingredients for the cream mixture together. Once the berries are cool, take a spoonful of the cream mixture into the popsicle molds, followed by some of the berry mixture. Alternate until the molds are full, then top with the popsicle sticks and freeze about 5 hours or overnight. Enjoy!
