Sweet & Spicy Grilled Peaches
With two months left of summer, there is plenty of time for more BBQs. Take your next cookout to a new level with this super easy, fake-fancy dessert. It’s sweet, spicy, rich, and sophisticated.
Sweet & Spicy Grilled Peaches
Makes 2 servings
INGREDIENTS
1 ripe peach
1 tablespoon extra virgin olive oil
1 tablespoon honey (or agave) + more for drizzle
2 tablespoons habanero hot sauce (I used Melinda’s)
2 tablespoons cashew cheese (I used Treeline Soft French Nut Cheese in Scallion Flavor)
1 tablespoon pistachios, chopped
A pinch of crushed red pepper flakes
DIRECTIONS
Preheat your grill to medium heat.
Slice the peach in half.
Whisk together the oil, honey, and hot sauce in a small bowl.
Brush the peach halves with the marinade.
Lightly oil the grill and place the peaches flesh-side down. Grill, covered, for 6-8 minutes until there are prominent grill marks, then flip and cook for an additional 3-4 minutes. Brush the peaches with the remaining marinade occasionally as they cook.
Remove the peaches from the grill, top each half with a tablespoon of cheese, a sprinkle of pistachios, and a drizzle of honey. Enjoy!
Note: Substitute honey with agave to make 100% vegan.
