Strawberry Cheesecake Bites

Super Bowl Sunday would not be complete without something sweet to finish it off. These "cheesecake" stuffed strawberries are easy, quick, and super cute!

Strawberry Cheesecake Bites

Makes 14-20 strawberries

Ingredients [for the filling]

• 4 oz. plain cream cheese, room temperature
• 3 tablespoons powdered sugar
• 1/2 teaspoon vanilla extract

Ingredients [for everything else]

• 1 pint fresh strawberries
• 2 graham crackers, crushed into powder

Directions

1. Mix together ingredients for the filling. Set aside.
2. Slice off the strawberry stems. Using a paring knife, cut a well into each strawberry.
3. Using a small spoon, fill each strawberry with the cheesecake filling. Be sure to over fill them so they are heaping.
4. Roll the cheesecake in the graham cracker crumbs.
5. Serve on a plate as-is or stick them with a food pick to make them into a pop. Enjoy!
