Roasted Balsamic Brussel Sprouts

I make these roasted brussel sprouts once a week in my house. They're easy, inexpensive, and healthy. Eat a big bowl of them on their own or as a side dish to complete a meal!

Roasted Balsamic Brussel Sprouts

Serves 2-4

INGREDIENTS

  • 1 lb. brussel sprouts
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup balsamic vinegar

DIRECTIONS

  1. Preheat your oven to 400°F.
  2. Cut the ends off the brussel sprouts, then cut them in half before placing them on a baking sheet.
  3. Drizzle the olive oil over the brussel sprouts then sprinkle them with the salt & pepper. Combine with your hands so that all the brussels are covered, then flip them over so that every one is on the pan cut-side down.
  4. Roast for 30-45 minutes, depending on your oven. They should be browned and tender when they're finished.
  5. Remove from the oven and splash with the balsamic. Serve immediately & enjoy!
